Chicken With prunes and Almonds

Introduction

hmm, chicken with prunes and almonds. This is one of the most delicious moroccan dishes. The ingredients are very easily found in most supermarkets, and the preparation is a breeze. We are sure you will enjoy this one. 

Ingredients (for 8 people)

2 chickens (about 3 pounds or 1 1/2 kg each)
500 g prunes (1 pound)
250 g almonds (8oz) + 1 glass of oil
1 tablespoon grilled sesame seeds
1 tablespoon ground pepper
1 teaspoon powdered ginger
1/2 teaspoon yellow food color
1 1/2 teaspoon crushed saffron flowers
1 tablespoon crushed parsley
1 tablespoon crushed coriander
2 chopped onions
1 tablespoon of salt
1 tablespoon of cinammon
2 tablespoon of sugar
250 g of butter (9oz)
1 litre of water (32 fl.oz.)

Preparation:

Cut each chiken into 8 pieces. Put in a thick saucepan with the offal. Add: salt, pepper, ginger, onions, saffron, parsley, coriander, cinnamon and water. Cook at a moderate heat, turning the meat from time to time(about 45 minutes). Then take it off the heat. In the sauce pan, still on the heat, put the washed prunes, and 15 minutes later add the sugar and the cinnasmon. Boil the sauce down until it is syrupy. Meanwhile skin almonds and fry them quickly in the oil for a few minutes. Arrange the pieces of the chicken in a dish, add the prunes and their heavy syrup. Spread fried almonds and grilled sesame seed on the top.
