Zucchini-Relish Salad
Ajlouk (Tunisia)

One of the satellite salads for Tunisian Couscous also makes a tasty dip.

2 medium zucchini
1 cup water
Juice of 1/2 lemon (1-1/2 tablespoons)
1 garlic clove, minced
Dash of hot-pepper sauce
1/2 teaspoon caraway seeds

Place zucchini in a large skillet. Add water. Bring to a boil. Reduce heat and cover. Simmer over loW heat 15 minutes or until zucchini is soft. Drain. Place zucchini in a medium bowl. Coarsely mash with a fork. Add remaining ingredients. Mix well. Refrigerate to chill. Makes 6 relish servings.
